Boozy Summer Popsicles

Last week EJ hosted the long-anticipated summer studio sample sale and WOW! What a turn out. We had a blast and loved sharing one-of-a-kind designs and our in-season pieces with everyone. We went all out for the event and even threw together some boozy popsicles as a treat for our shoppers. We received so many requests for the recipes that we knew we had to share them with the world, along with some tips and tricks to make them a success. Next time you need a frozen summer treat that packs a load of fun, turn to these boozy summer popsicle recipes!

The most important supplies for all of these recipes are the mold tubes and a funnel. We recommend these ziplock tubes from eBay. They come with a silicone funnel!

Raspberry Rosé

  • 8 fresh raspberries
  • 2 oz. brut rosé

Drop fresh raspberries into mold tube, then fill with rosé to fill line. Freeze for at least 6 hours.

Use a sparkling rosé for a crisper taste!

Strawberry Champagne

Makes 6 servings.

  • 1/4 c. water
  • 1/4 c. sugar
  • 2 tbsp. lemon juice
  • 1 lb. fresh strawberries
  • 1 c. sparkling champagne

Add water, sugar, and lemon juice in a small pot and bring to a slight boil for 5 minutes. Set aside to cool. Remove leaves from strawberries, cut in half and puree in food processor. Place pureed strawberries in bowl and mix with the simple syrup in the first step. Add in champagne. Pour mixture into mold tubes and freeze for at least 6 hours.

Peach Bellini

  • 2 c. sliced peaches
  • 1 c. white wine
  • 1/4 c. orange juice

Combine all ingredients in a blender and process until smooth. Pour mixture into mold tubes. Freeze for at least 6 hours.

Pour half of the peach bellini mixture into the strawberry champagne mixture for a twist!
